A counterintuitive result about percentages and ratios when dealing with mixtures.
You have 100 kg of potatoes that are 99% water (1% solid). After dehydrating to 98% water, how much do they weigh? Intuition says 99 kg, but the answer is 50 kg. The 1 kg of solid is now 2% of the total.
